TEMPURA BATTERED ZUCCHINI

 

  • Key Ingredients- baby zucchini (more tender and flavorful), tempura batter, confit garlic aioli, pecorino romano, chili flake
  • Serving Size- 4 each baby zucchini cut in half
  • Modifications are limited to the sauce and garnishes 
  • Recommended as a share plate to start the meal, great vegetarian option
  • Allergies- Gluten, Dairy, Onion

BUFFALO CAULIFLOWER DIP (8-10 minutes)

  •  Cheese dip served in cast-iron skillet on a large rectangular plate HOT
  • Base- wood-fired roasted cauliflower, spicy hot sauce, bleu cheese, cheddar cheese, sour cream -- please note none of these ingredients can be omitted
  • Garnish- scallions & corn tortilla chips
  • Allergies - dairy -- please note, while the tortilla chips themselves do not contain gluten, they are fried in a fryer with cross-containments

STREET CORN ELOTES (3-5 minutes)

  • Served on rectangular sandwich plate
  • Base- wood-fired jersey corn ON THE COB, chipotle-lime aioli
  • Garnish - queso fresco, micro-cilantro, bruleed lime wedge
  • Portion - 1 full cob of corn 
  • This dish comes off the pizza station!

FRIED GREEN BEANS (3-5 minutes)

  •  Green beans served in a square soup bowl with sauce on the side
  • Base - Buttermilk-soaked, lightly dusted and fried green beans 
  • Garnish- Horseradish crema
  • Allergies- Dairy, gluten

Zuppa di Pesce ( 5-8 Minutes)

  •  Served in poke bowl
  • Base- seafood bisque (lobster/tomato based), cod, shrimp, scallop
  • Garnish- crostini bread, bacon lardons, chives, olive oil
  • Portion - 12 oz

Smoked Salmon Mac (6-9 Minutes)

  •  Served in skillet with handle CAN BE HOT
  • Base- Cavatappi pasta, smoked salmon, capers, dill, chives
  • Sauce- Parmesan cheese mornay sauce 
  • Garnish - Smoked paprika bread crumb
  • Expo Garnish - chives
  • Allergies- Dairy, Gluten, Onion
  • Portion-7oz 

Strawberry Burrata Caprese (7-12 Minutes)

  •  Served on long black rectangular plate DELIVERED FROM PIZZA WINDOW
  • Base- Seasoned pizza bread, melted mozzarella, baby kale, arugula, wood fired heirloom tomatoes, shaved yellow onion, diced strawberries, oreganata oil  
  • Topped- Burrata ball, balsamic reduction, pistachio pesto, grana padano 
  • Allergies- dairy, gluten, onion, nut
  • Portion- 4 oz burrata ball

Crispy Pork Tacos (7-10 Minutes)

  •  Served on rectangular white plate
  • Base- Corn tortillas, crispy pork, manchego cheese, 
  • Garnish- Salsa verde, Tomatillo Corn salsa, sour cream, queso fresco
  • Expo garnish - Lime wedge
  • Allergies- dairy
  • Portion- 2 tacos

Cajun Seafood Boil (8-12 Minutes)

  •  Served in Mussel bowl
  • Base- Snow crab, mussels, shrimp, smoked sausage, corn, marble potatoes
  • Broth - Cajun lobster broth
  • Garnish- Fresh parsley
  • Expo garnish - Lemon wedge
  • Allergies - Shellfish, dairy 

Chicken Meatballs Amalfi (4-7 Minutes)

  •  Served in cast iron skillet CAN BE HOT
  • Base - Chicken meatballs
  • Sauce - Lemon pecorino cream sauce
  • Garnish - Heirloom cherry tomatoes, spinach, microgreens
  • Allergies -dairy, gluten
  • Portion - 3 meatballs

  • Base- Chorizo sausage, charred corn, caramelized onions, fresh mozzarella

  •  Base- Fresh mozzarella, parmesan mornay sauce, claw crab meat, pepperoni, basil

  • Base- Italian tomatoes, garlic confit, fresh mozzarella, pepperoni, ricotta flowers, pecorino romano, red pepper flake, spicy honey

  • Key Ingredients- smash burger patties, cinder special sauce ( mayo based, ketchup, pickles, garlic, spices) cooper sharp american, smoked cheddar, toasted potato roll, bacon, LTO
  • Serving Size- Two 3oz smash burger patties, 2 slices bacon, 6oz fries
  • Modifications can be done to the burger.
  • Recommend for burger lovers, this will be a winner

Prime Rib Dip (8-12 Minutes)

  •  Served on black rectangular plate
  • Base-Sliced prime rib, garlic aioli, broccoli rabe, roasted long hots, sharp provolone, crispy onions, kaiser roll, cherry peppers, 
  • Dipping Sauce - Beef au jus
  • Allergies- onion, garlic, gluten

Lemon Pepper Chicken (8-12 Minutes)

  • Served on large square plate
  • Base-Neapolitan wood fired pizza pocket, wood fired chicken, fresh mozzarella, arugula, baby kale, frisee, roasted peppers, artichokes, lemon pepper dressing

Just Another Chicken Sandwich (6-10 Minutes)

  •  Served on rectangular sandwich plate
  • Base- Buttermilk fried chicken, chipotle honey hot sauce, applewood smoked bleu cheese, arugula, lemon oil, pickles, ciabatta bread

Summer Veggie Lasagna (10-14 Minutes)

  •  Served in medium plate with lip
  • Base- Wood fired zucchini, yellow squash and eggplant, pistachio pesto garlic bechamel, ricotta mozzarella, spinach, roasted red peppers, pecorino romano, red pepper coulis (room temperature sauce on bottom of plate), chopped pistachio, grated grana padano 
  • Allergies- gluten, dairy, onion 

Peach Bourbon Glazed Salmon (10-15 Minutes)

  •  Served on large square entree plate
  • Base - peach bourbon glazed salmon, herb-butter basmati rice, fresno peach cucumber salsa
  • Herb Rice has fresh dill and lemon, salsa has a subtle heat from fresno chile, red onion and orange juice
  • Garnish - micro cilantro
  • Allergies- dairy (butter), onion
